To prepare preheat oven to 425 degrees. Grease an 8 inch skillet and place in oven to heat. Combine 1 egg, 2/3 cup milk and cornbread mix in small bowl. Stir until smooth.
To bake pour batter into prepared skillet. Bake 18 to 20 minutes or until lightly browned.
For thinner cornbread, pour batter into 9 inch skillet and bake 15 to 18 minutes. Makes 4 to 6 servings.
Muffins or cornsticks: Grease and heat 6 to 8 muffin pans or 8 to 10 cornstick molds. Prepare batter as directed above. Bake 15 to 18 minutes.
