SHEPHERD'S PIE 
2 lbs. ground beef
1 med. onion
3 c. mashed potatoes
1 c. Cheddar cheese

Brown ground beef and onion; drain well. Put beef into a casserole dish and layer mashed potatoes on top. Cover with shredded Cheddar cheese and bake at 350 degrees until cheese is melted and bubbly. (You can also add a layer of your favorite vegetable, if desired.)
