MISSISSIPPI PECAN CAKE 
1/2 c. (1 stick) butter
2 c. sugar
1 egg
3 egg yolks
1 tsp. vanilla
3 c. flour
3 tsp. baking powder
3/4 tsp. salt
1 c. milk

PECAN MIXTURE:

3 egg whites
1/4 tsp. salt
1/4 c. water
1/2 c. sugar
2 tbsp. flour
1 tsp. baking powder
1 lb. ground pecans

Preheat oven to 375 degrees. Grease a 10-inch tube pan and line bottom with wax paper.

To prepare cake batter: Cream butter and sugar until fluffy; add egg and yolks one at a time. Beat well after each addition. Add vanilla.

Sift together flour, baking powder, and salt. Add alternately with milk, blending well. Pour 1/2 of batter into pan.
