LITTLE DIXIE MEXICAN DINNER 
8 corn dodgers
2 c. chili
2 c. pinto or Ranch style beans
2 c. grated cheddar cheese
2/3 c. finely chopped onion

To make corn dodgers, pour boiling water into 2 cups of cornmeal (with 1/2 teaspoon salt). Stir until the right consistency to make patties. Fry the patties in hot oil until golden brown on both sides. The thinner you make the patties, the crispier they will be.

On individual plates, place 2 corn dodgers and then cover with layers of chili, cheese, beans and onions. There should be one more layer of cheese on top. Serves 4.
