BLUEBERRY PIZZA | |
1 (8 oz.) pkg. cream cheese 2 eggs 1/2 c. sugar 1 tsp. vanilla 1/3 c. walnuts TOPPING: 4 c. blueberries, fresh, washed and drained 1 c. sugar 3 tbsp. cornstarch 1/4 tsp. cinnamon 1/4 tsp. salt 1/2 c. water 1 tbsp. butter Cover a pizza sheet with pie crust and bake at 350 degrees for 15 minutes. Blend cheese, eggs, sugar, vanilla and nuts. Pour over baked pie crust and return to oven for 10 minutes, cool. Mix 2 cups of blueberries with 1/4 cup of the sugar and set aside. In saucepan, mix remaining sugar, cornstarch, cinnamon, salt and water. Add remaining blueberries and butter. Bring to boil and simmer until thick. Add reserved sugared blueberries and cool. Pour on pie shell. Store in refrigerator. |
