MEXICAN CASSEROLE 
1 1/2 lbs. hamburger meat
1 lb. rat cheese, grated
2 cans jalapeno beans
1 can enchilada sauce
1 can taco sauce
2 cans tortillas
2 med. onions, chopped

Put 1 tablespoon shortening in heavy pan. Saute onions, add hamburger meat and brown. Drain excess grease. Add beans; mix well. In large casserole dish put a layer of tortillas, then pour some enchilada sauce over them. Add hamburger mixture then a layer of cheese, pour some taco sauce over cheese, then start with enchiladas and layer until mixture is used. Bake about 30 minutes in 350 degree oven.
