SCALLOPED POTATOES 
4 tbsp. butter
2 tbsp. flour
3 c. milk
Salt and pepper to taste (omit if adding a spicy meat)
8 potatoes, peeled and sliced (med. size)
1 onion, chopped fine
Grated cheese or crumbs, for topping
Cooked ham or sausage, if desired

Preheat oven to 350 degrees. Melt butter. Stir in flour gradually. Add milk slowly, stirring constantly. Cook and stir over low heat until thickened. Add salt and pepper. Butter a 2-quart baking dish. Alternate layers of meat and potatoes, sprinkling with onion as you go. Pour sauce on top. Sprinkle cheese or crumbs on top. Bake until tender, about 1 1/4 hours. Serves 6-8.

This recipe tastes better the second day.
