CHICKEN PIECES WITH LIME 
1 chicken, cut up
2 tbsp. olive oil
1/2 tsp. whole thyme
2 tbsp. lemon juice
Fresh cracked pepper to taste
2 limes, cut into wedges

Place the chicken pieces in an oiled baking dish, and mix with the olive oil, thyme, lemon juice, and pepper. Bake at 375 degrees for 45 minutes to 1 hour, or until the chicken is golden and tender. Garnish with the wedges of lime so that each guest may soak his chicken in lime juice and enjoy. You will not even miss the salt. Serves 4.
