COCONUT TARTS 
1 1/2 c. Angel Flake coconut
2 c. sugar
1 stick butter, melted
5 eggs
3/4 c. buttermilk
2 tsp. vanilla

Beat eggs with fork and add them to the sugar. Add butter, buttermilk and vanilla. Stir in coconut last. Bake at 350 degrees for 45 minutes. Do not use mixer. Makes 2 pies or 16 tarts.
