QUICK COCONUT ICING 
Mix together 1 (8 oz.) carton sour cream, 2 cups sugar and 2 (6 oz.) packages frozen grated coconut. Let sit at room temperature about 30 minutes. Sprinkle an additional package of coconut over top of frosted cake. Icing will frost a 3-layer (9-inch) cake. VERY GOOD!
