NANNY'S FRUITCAKE | |
1/2 lb. butter 1 c. sugar 5 eggs 1 3/4 c. flour 1/2 tsp. baking powder 1 lb. candied pineapple 3/4 lb. candied cherries 4 c. pecans 1/2 oz. vanilla extract 1/2 oz. lemon extract Chop nuts and fruits into medium size pieces; dredge with a small part of the flour. Cream butter and sugar until light and fluffy. Add well beaten eggs and blend well. Sift remaining flour and baking powder together. Fold into egg and butter mixture. Add vanilla and lemon extract, mix well, then add fruit and nuts, mixing well. Pour batter into greased and floured 10 inch tube pan. Place in cold oven. Bake at 250 degrees for 3 hours. |
