CARNE ADOVADA (CURED PORK) 
1 pt. chile
2 cloves garlic, minced
2 tsp. salt
2 tbsp. crushed oregano leaves
5 lbs. lean pork strips
1 c. water

Add the chile, garlic, salt, and oregano. Mix well. Add the pork strips a few at a time, covering each pork strip well with mixture. Cover, refrigerate for 24 hours. Place in roaster or oblong pan the water, then add the meat, cover and place in 300 degree oven for 2 1/2 to 3 hours. NOTE: Freeze cooked meat in small amounts.
