CRANBERRY MUFFINS 
1 c. sugar
2 c. flour
1 1/2 tsp. baking powder
1/2 tsp. baking soda
2 tsp. orange peel
1 1/2 tsp. nutmeg
1 tsp. cinnamon
1/2 tsp. ginger
1/2 c. shortening
3/4 c. orange juice
1 tbsp. vanilla
2 eggs, beaten
1 1/2 c. cranberries, chopped
1 c. walnuts, chopped

Mix dry ingredients. Cut in shortening. Stir in juice, vanilla and eggs. Fold in cranberries and nuts. Spoon into greased muffin cups. Bake 25 minutes at 350 degrees.
