CHILI (`91-92' NOVELL AWARD WINNER) | |
3 lbs. chuck roast 3 lg. yellow onions 1 to 2 cans Ranch style beans 1 to 2 cans Ro-Tez tomatoes 1 to 2 cans chicken stock 1 to 2 c. mild chili powder 6 cloves of garlic 1 c. approximately red wine 1/4 c. smoke flavored BBQ sauce 8 to 10 tbsp. Roux Dice and brown meat, dice and brown onions in a large covered pot. Add meat, onions, beans, tomatoes, stock, chili powder, garlic, red wine and BBQ sauce. Simmer for 2 to 3 hours, stir often, then add Roux to thicken. Serve with cheese, onions, fresh sliced chili peppers. 8 to 10 people. |
