STUFFED ARTICHOKES | |
8 artichokes 1 lg. box Progresso Italian bread crumbs 1 can Parmesan-Romano cheese 1 lg. white onion, chopped fine 1 1/2 to 2 whole pods garlic, chopped fine Olive oil (to oily consistency) Parsley 1 can artichoke hearts, drained, chopped well Mix all ingredients in large bowl. Clean cut thorns and tail off artichokes; drain. Stuff artichokes; wrap in aluminum foil with top exposed. Place in large pot with water in bottom of pot; cover and steam cook for 2 1/2 to 3 hours; you may need to add water while cooking. You can freeze artichokes in Saran Wrap and then heat in microwave. |
