ZUCCHINI CAKE 
3 c. grated zucchini
2 1/2 c. sugar
3 c. sifted flour
1 c. salad oil
4 eggs
2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1 1/2 tsp. cinnamon
1 c. chopped nuts

Sift all dry ingredients together and set aside. Cream sugar and eggs. Add oil to zucchini and add to sugar and egg mixture. Add dry ingredients and nuts. Bake at 350 degrees for 40 minutes in a 9x13 inch pan.

ICING:

1 c. shortening
1 c. brown sugar
1/2 c. hot milk
1 tsp. vanilla

Cream together.
