MUFFINS A GO GO 
1 med. orange
1/3 c. orange juice
1/4 c. vegetable oil
1 egg
1 1/2 c. self-rising flour
1 c. oat bran
9 tbsp. (1/2 c. plus 1 tbsp.) light brown sugar
10 pitted prunes, chopped
24 pecan halves
1/2 tsp. cinnamon

Grate rind from orange (orange colored part only). Reserve. Peel orange and chop coarsely. In processor or blender, combine chopped orange with juice, oil, and egg. Process until smooth. In medium bowl, sift flour. Add bran. Set aside 2 tablespoons brown sugar and add remaining sugar to dry ingredients together with prunes and reserved orange rind. Set aside 16 pecan halves. Chop remaining 8. Add to dry ingredients. Add orange mixture and mix quickly and lightly until ingredients are moistened.

Divide muffin mixture among 16 paper muffin pan liners. Mix reserved 2 tablespoons sugar and cinnamon. Sprinkle over muffins. Microwave muffins, four at a time, on high 1 minute 20 seconds. Very good!

Since microwave ovens vary in power, you may need to adjust your cooking time.
