GUACAMOLE SALAD 
4 tomatoes, peeled
2 tbsp. lemon juice
1 tbsp. grated onion
1 tsp. chopped fresh coriander or 1/2 tsp. ground coriander
1/4 tsp. hot pepper sauce
2 ripe avocados
1 sm. head lettuce, for garnish
Cilantro sprigs, for garnish
Corn chips, for garnish

Dice tomatoes; place in a medium bowl. Stir in lemon juice, onion, coriander and hot pepper sauce. Cut avocados in half; pit and peel avocados. Dice peeled avocados. Add to tomato mixture. Beat with a wooden spoon until partially blended but pieces of avocado and tomato still remain.

Arrange lettuce leaves on 4 individual plates. Spoon guacamole salad on lettuce; garnish with coriander sprigs. Serve immediately with corn chips. Makes 4 starters.
