POTATO SOUFFLE 
1 pkg. Idaho mashed potato (prepare as pkg. directs)
1 sm. carton cottage cheese
1 c. sour cream
2 tsp. salt
1 clove garlic, minced
1/4 c. chopped pimiento
1/4 c. onion
3 egg yolks, beaten
3 egg whites, beaten
3 tbsp. butter

Beat together prepared potatoes, cottage cheese, sour cream, pimiento, onion, salt, garlic and egg yolks. Fold in egg whites. Dot with butter. Prepare in 2 quart souffle dish or casserole. Bake at 350 degrees for 1 hour.
