POTATO-HAM SCALLOP 
2 c. cubed, fully cooked ham
6-8 med. potatoes, peel, thinly slice
1/4 c. fine chopped onion
1/3 c. flour
2 c. milk
3 tsp. dry bread crumbs
1 tbsp. butter
2 tsp. chopped parsley

Place half the ham in a 2 quart casserole dish. Cover half the potatoes and half onion. Sift half the flour over it. Season with salt and pepper. Repeat layering ham, potatoes and onion. Season with more salt and pepper. Sift remaining flour on top. Pour milk over all. Bake covered at 350 degrees until potatoes are nearly tender, 1 - 1 1/2 hours. Uncover. Combine bread crumbs and melted butter. Sprinkle with parsley. Bake 15 minutes. 4-6 servings.
