OATMEAL CAKE 
1 1/4 c. water
1/2 c. butter
1 c. sugar
1/2 c. firmly packed brown sugar
1 tsp. baking soda
Vanilla or fruit flavored yogurt
1 c. quick-cooking oats
2 tsp. grated orange or lemon peel
2 eggs, beaten
1 1/3 c. flour
1/2 tsp. cinnamon

Bring water to a boil in a saucepan. Remove from heat and stir in oats and butter; let stand 20 minutes.

Combine orange or lemon peel and remaining ingredients, except yogurt in a mixing bowl. Stir in oats mixture, blending well. Pour into a greased 9x13x2 inch baking pan. Bake in preheated 250 degree oven for 35 minutes. Serve warm or cool topped with yogurt.
