BAKERY SHOP BRAN MUFFINS 
3 eggs
1/2 c. salad oil
1/2 c. honey
3 1/2 c. bran cereal
1 1/2 c. milk
2 1/4 c. flour
1 tsp. cinnamon
4 tsp. baking soda

In small bowl blend eggs, oil, and honey. In large bowl combine cereal and milk, let stand 5 minutes, add egg mixture to cereal. Blend lightly. Mix in rest of dry ingredients. Spoon in paper lined or greased muffin tins. Bake at 350 degrees for 25-30 minutes.

HINT: I always add 1/2 of raisins or dried fruit chopped and nuts. I also add more cinnamon than what is called for.
