POMEGRANATE JELLY | |
3 1/2 c. pomegranate juice 1/4 c. lemon juice 1 pkg. pectin 5 c. sugar Put fruit and lemon juice in 8 quart kettle or saucepan. Add pectin. Stir thoroughly, make sure ALL pectin is dissolved. Put mixture on high heat. Bring to a boil. Stir constantly to keep jelly from scorching. Add sugar and mix well. Stirring constantly, bring to a full boil that can't be stirred down. Boil hard EXACTLY 2 minutes. Stir constantly. (If foaming occurs, add 1/2 tablespoon butter now.) Remove from heat. Fill jars and water bathe. Makes 6 (1/2 pint) jars. |
