MOM'S LIGHT CHRISTMAS FRUIT CAKE 
1 c. butter
2 c. sugar
2 c. soured milk
4 c. flour
1 tsp. cinnamon
1 tsp. nutmeg
7 eggs, beaten separately
1 lb. cut-up dates
1/2 lb. candied pineapple, cut-up
1 level tsp. baking soda
1 level tsp. baking powder
1/2 tsp. ginger OR 1 tbsp. vanilla
1/2 lb. white raisins
2 lbs. mixed candied fruit
1 c. broken nut meats

Cream butter and sugar together. Add egg yolks and sour milk, flour, baking powder, spices and soda that have been sifted (use a small amount of the flour to dredge fruit). Add fruit and nuts and last of all, fold in beaten egg whites.

This recipe makes 2 good-sized fruit cakes. Bake in greased angel food cake pans at 275 degrees for 2 hours. Cool in pans about 15 minutes and run knife around edges before removing from pans.
