TEXAS CORNBREAD 
1 tsp. rounded baking soda
1 tbsp. warm water
1 qt. buttermilk
2 eggs, well beaten
1 tbsp. melted butter
5 c. yellow cornmeal

Preheat oven to 360 degrees. Dissolve baking soda in warm water; add this to buttermilk. Stir, then add eggs, melted butter, and cornmeal. Beat quickly. Turn at once into 2 (9 inch) round, greased baking pans. Bake 45 minutes. Serve warm. Makes 20 servings.
