RED VELVET CAKE 
1 1/2 c. sugar
2 eggs
2 1/2 c. cake flour
1 1/2 c. Wesson oil
1 c. buttermilk
1 tsp. vanilla
1 tsp. baking powder
1 tsp. vinegar
1 oz. red food coloring

Beat egg. Add sugar, and then Wesson oil and vinegar. Sift flour and soda together. Add to mixture. Add buttermilk slowly. Add vanilla and cake coloring.

Bake in 3 greased and floured 9 inch pans for 30 minutes at 350.

Icing:

1 box 10 x powdered sugar
1 (8 oz.) package of cream cheese
1 stick of butter
1 c. chopped nuts

Have butter and cream cheese at room temperature. Beat butter and cream cheese slowly, adding powdered sugar and mixing until smooth. Add nuts and spread on cake.
