HAM & CHEESE POCKETS 
1 cup finely chopped, cooked ham
1 cup finely shredded Mozzarella cheese
1 (10 count) pkg. flaky refrigerator biscuits
1 1/2 tsp. prepared mustard, or to taste
1 tbsp. mayonnaise
1 tbsp. sweet piccalilli relish or chopped sweet gherkins
1 egg

Combine ham and cheese in small bowl; mix well. Combine mustard, mayonnaise and relish.

Roll biscuits into 4 1/2 inch circles on floured surface. Spread center of each circle generously with mustard mixture; top with 2 scant tablespoons ham mixture. Fold over biscuit to enclose filling; seal edges by crimping with a fork or pie crimper.

Place on baking sheet.

Brush with mixture of egg and 1 tablespoon water.

Bake in preheated 400°F oven for 10 to 12 minutes or until puffed and golden. Serve hot or cold.
