CUCUMBER MOUSSE 
1/4 c. lemon juice
2 env. unflavored gelatin
1 c. chicken broth, boiling
1 c. mayonnaise
1/2 c. milk
2 tbsp. scallion, minced
2 tsp. dill
1/2 tsp. pepper
2 cans tuna, crab or shrimp
1/2 c. cucumber, shredded

Combine gelatin and lemon juice in mixing bowl. Let stand until gelatin softens. Add broth and stir to dissolve gelatin. Add mayonnaise, milk, scallions, dill and pepper. Chill 30 minutes or until slightly thickened. Beat gelatin mixture until frothy. Blend in tuna and cucumber. Pour into 5 1/2 cup mold slightly oiled. Chill and decorate with pimiento and olives.
