SCALLOPS HORS D'OEUVRE 
1 lb. fresh bay or sea scallops
1 c. dry white wine
Italian dressing

Test scallops for freshness, see that they have a sweetish odor. Rinse and trim muscle. Poach three to five minutes in white wine. Remove and chill. Marinate scallops six to eight hours in Italian dressing. Drain and serve with toothpicks. Quick and easy!
