4 c. coarsely chopped apples
2 c. sugar
2 eggs
1/2 c. vegetable oil
2 tsp. vanilla
2 c. sifted all-purpose flour
2 tsp. baking soda
2 tsp. cinnamon
1 tsp. salt
1 c. walnuts

Combine sugar and apples; let stand. Beat eggs well; add oil and vanilla; then mix with apples and sugar. Add flour, cinnamon, salt and soda. Mix well and add nuts; mix well. Place in 13 x 9 x 2 inch pan. Bake at 350 degrees for 40-45 minutes.

SAUCE:

1 c. light brown sugar
2 tbsp. cornstarch
1 c. water
1/4 c. butter
1 tsp. vanilla

Cook sugar, cornstarch, water and butter until clear. Add vanilla. Serve warm over cake.
