APPLE AND OAT BRAN MUFFINS 
1-1/4 c. whole wheat flour
1/3 c. packed brown sugar
1/4 tsp. baking soda
1/4 tsp. ground nutmeg
1 c. buttermilk
2 tbsp. cooking oil
1 c. oat bran
2-1/2 tsp. baking powder
1/4 tsp. salt
1/4 tsp. cinnamon
2 egg whites
3/4 c. apples, peeled and shredded

In a medium bowl stir together flour, oat bran, brown sugar, baking powder, baking soda, salt, nutmeg, and cinnamon. Set aside.

In a small bowl combine buttermilk, egg whites, and oil, Add to dry ingredients; stir just till moistened.

Stir in shredded apple. Store batter, tightly covered, in the refrigerator for up to 5 days.

To bake, spray muffin cups with non-stick spray coating. Spoon about 1/4 cup batter into each muffin cup.

Bake in a 375°F oven for 18-20 minutes or till a toothpick inserted near the center comes out clean.

Makes 12 muffins.
