CHICKEN WITH CHEESE 
1/4 c. butter
4 chicken cutlets, boned & skinned
1 c. sliced mushrooms
2 tbsp. minced shallots
1/4 tsp. salt
1/4 tsp. pepper
1 c. (4 oz.) shredded Mozzarella cheese

Melt butter in a skillet over medium heat. Add chicken and cook 10 minutes. Turn chicken, add mushrooms and shallots. Sprinkle with salt and pepper, cook 10 minutes or until tender. Transfer chicken to platter. Sprinkle cheese over chicken. Top with mushrooms and shallots. Cover and let stand 5 minutes or until the cheese melts. 4 servings.
