SHRIMP CREOLE 
1 c. onion, diced
1 c. green pepper, diced
1 c. celery, chopped
2 cloves garlic, minced
1 qt. chopped stewed tomatoes
1 sm. can tomato paste
3 tbsp. chopped parsley
1 tsp. salt
1/4 tsp. cayenne pepper
3 lb. raw cleaned shrimp
2 tsp. basil
2 tsp. cilantro

Saute onion, celery and pepper in small amount of butter until soft, about 5 minutes. Stir in garlic and cook 5 more minutes. Add tomatoes, paste, herbs and spices. Simmer 15 minutes. Add shrimp, cover and simmer 30 minutes. Serve over hot fluffy rice.
