SHRIMP CHARLES 
12 oz. pkg. lg. shrimp
2 tsp. vegetable oil
2 cloves garlic, finely chopped
Salt to taste
1 1/2 oz. cooking sherry or white wine
12 oz. stewed tomatoes
1 med. onion, finely chopped
1 tsp. parsley
1/4 lb. feta cheese, cut in 1/2 inch cubes

Drain tomatoes, chop fine and return to juice. Saute onions and garlic in oil until golden. Add tomatoes and bring to boil. Reduce heat immediately and simmer slowly 45-60 minutes. During last 5 minutes, add parsley and season to taste. Arrange shrimp in baking dish and place cube of feta cheese on each one. Cover shrimp with sauce and sprinkle with sherry or wine. Bake at 400 degrees for 10 minutes.
