DOUBLE GOOD PEANUT BUTTER
COOKIES
 
3/4 c. firmly packed dark brown sugar
1/2 c. corn oil
1/2 c. Skippy super chunk peanut butter
1 egg
1 c. shredded peeled carrots
1 c. quick oatmeal
3/4 c. whole wheat flour
1/2 c. instant dry milk
1/2 c. raisins
3/4 tsp. salt
1/2 tsp. cinnamon
1/2 tsp. baking powder

Stir together sugar, corn oil, peanut butter and egg until mixed. Stir in carrots. Mix together oatmeal, flour, milk, raisins, salt, cinnamon and baking powder. Stir into peanut butter mixture. Place by heaping teaspoon on ungreased cookie sheet. Bake at 350 degrees for 15 minutes or until lightly browned. Cool on rack. Makes 3 dozen, 3 inch cookies.
