CHICKEN BREASTS SUPREME 
2 tbsp. butter, divided
Salt & pepper
4 chicken breasts, skinned
1/2 pt. whipping cream
1 tbsp. cornstarch
1/3 - 1/2 c. white wine or sherry
1 c. grated Swiss cheese

Melt 1 tablespoon butter in a large skillet with salt and pepper. Add chicken breasts and brown lightly. Remove to a casserole. In same skillet add another tablespoon of butter, whipping cream and cornstarch. Cook slowly and stir; add white wine. When sauce thickens, pour over the chicken. Cover generously with grated cheese. Bake, covered at 350 degrees for 1 hour. Remove top the last few minutes so the cheese will brown. Serves 4.
