GREEK SALAD 
1 c. celery cut in 1/2 inch pieces
1 med. cucumber cut in 1/2 inch pieces
2 med. tomatoes cut in eighths
1 sweet onion chopped in big pieces
8 radishes, halved
1 green pepper, cut in large pieces
1 dozen black olives
2 dozen (Colby and Brick) cheese cubes

Mix together 1/3 cup cider vinegar, 2 tablespoons olive oil, 1/2 to 3/4 teaspoon oregano, and salt and pepper to taste. Place all ingredients in shallow dish and pour vinegar mix over vegetables. Leave at room temperature a few hours and stir occasionally. Chill and serve.
