MORNING GLORY MUFFINS 
1/2 c. raisins
2 c. flour
1 c. sugar
2 tsp. baking soda
2 tsp. cinnamon
1/2 tsp. salt
1/8 tsp. nutmeg
2 c. shredded carrots
1 shredded Granny Smith apple
1/2 c. sliced almonds
1/2 c. coconut
3 eggs
2/3 c. oil
2 tsp. vanilla

Soak raisins in hot water to plump.

Mix flour, sugar, soda, cinnamon, salt and nutmeg together.

Add carrots, apple, almonds, coconut raisins, eggs, oil and vanilla to mixture and blend well.

Spoon mixture into muffin pans.

Bake at 350°F for 20-25 minutes.

Makes 2 dozen.
