EASY HUSH PUPPIES 
2 (7 1/2 oz.) pkgs. corn muffin mix
2 eggs, beaten
1/4 c. minced onions
Vegetable oil

Measure 2 1/4 cups corn muffin mix (save reminder of mix for other uses). Combine mix, onions, eggs; stirring well. Carefully drop batter by tablespoonfuls into deep, hot oil (370 degrees). Cook only a few at a time, turning once. Fry 1 1/2 minutes or until hush puppies are golden brown. Drain on paper towels. Makes 2 dozen.
