FISH FILLETS IN LEMON BUTTER 
1 lb. firm fish fillet
1/2 to 1 tsp. salt
1/8 tsp. pepper
1/2 c. butter
3 tbsp. chopped parsley
1 tbsp. lemon juice
1/2 c. buttery cracker crumbs
1/2 tsp. paprika

Sprinkle fish fillets with salt and pepper. Starting at tail-end roll fillets up. Arrange rolls in 8 inch square dish.

In 1 quart glass measure place butter. Microwave at high 2 minutes until melted. Blend parsley and lemon juice and pour over fish rolls. Top with crumbs then sprinkle on paprika. Microwave at high 6-8 minutes. Rotate dish 1/2 turn after half time.

Since microwave ovens vary in power, you may need to adjust your cooking time.
