IMPOSSIBLE CHEESECAKE 
3/4 c. milk
1/2 c. Bisquick baking mix
2 (8 oz. each) pkgs. cream cheese, cut into 1/2 inch cubes and softened
2 tsp. vanilla
2 eggs
1 c. sugar

Blend milk, vanilla, eggs, sugar and baking mix in blender on high for 15 seconds. Add cream cheese. Blend on high for 2 minutes. Pour into greased pie plate 9 x 1 1/4 inches. Bake at 350 degrees for 40 to 45 minutes; cool.

TOPPING:

1 c. dairy sour cream
2 tsp. vanilla
2 tbsp. sugar

Mix all ingredients and spread carefully over top of cheesecake. Serve with fruit.
