GERMAN PANCAKE 
3 eggs
1/2 c. flour
1/2 tsp. salt
1/2 c. milk
2 tbsp. melted butter
Lemon juice
Powdered sugar

Using an egg whisk, beat eggs until blended. Sift flour, measure and sift again with salt. Add flour and salt to eggs in 4 additions until mixture is smooth. Add milk in 2 additions, beating slightly after each. Lightly beat in butter. Generously butter a cast iron frying pan. Pour batter into pan and bake at 425 degrees for 20 minutes, then at 350 degrees for 10 minutes. Note: Watch carefully as cooking time will vary with different ovens. Pancake should be golden brown and very puffy. Serve with melted butter, lemon juice and powdered sugar. Serves 4 children or 2 adults - can be habit forming.
