ZUCCHINI FRITTERS | |
1/3 c. Bisquick 1/4 c. Parmesan cheese 1/8 tsp. each salt and pepper 2 eggs, slightly beaten 2 c. coarsely grated zucchini (about 2 med.) 2 tbsp. butter Mix Bisquick, Parmesan cheese, salt and pepper. Stir in eggs until moist. Fold in zucchini. Fry in butter 3 or 4 minutes to a side or until brown. Keep warm. |
