SWEET POTATO SOUFFLE 
2 c. cooked mashed sweet potatoes
1/2 stick butter
3/4 c. sugar
1/2 c. milk
2 eggs, beaten
1 tsp. cinnamon
1 tsp. vanilla
1 tsp. butter flavoring
1/2 tsp. salt
1/2 c. coconut

Mix all ingredients in bowl. Spread in greased casserole dish.

TOPPING:

1/2 c. brown sugar
1/2 c. butter
1/2 c. flour
3/4 c. pecans

Mix all ingredients with fork. Sprinkle on top of casserole. Bake at 350 degrees for 30 minutes.
