MEXICAN LASAGNA 
12 oz. ground turkey
2 c. canned tomatoes, drained and crushed
1 c. mild picante sauce
1 pkg. taco seasoning mix
1 c. part-skim Ricotta cheese
4 oz. grated cheddar cheese
4 oz. grated Monterey Jack cheese
8 cooked lasagna noodles

Brown turkey. Add tomatoes, picante sauce and taco seasoning. Bring to boil and simmer for 10 minutes.

Cook lasagna noodles. Spread 1/2 meat mixture on bottom of 9-inch square pan. Top with 4 noodles. Spread with 1/2 of Ricotta cheese, then cheddar cheese. Repeat. Finish with Monterey Jack cheese. Bake at 350 degrees for 30 minutes.
