SWEET POTATOES 
2 (2 lb. 8 oz.) cans yams, drained
2/3 c. orange juice
1 tbsp. grated orange rind
1 tsp. ground ginger
4 tbsp. butter, melted
1/3 c. brown sugar
3 egg yolks
5 tbsp. brandy

Beat yams until smooth. Mix in the rest of the ingredients except the topping. Put in 9 x 13 dish.

TOPPING:

2/3 c. brown sugar
1/4 lb. butter
1 c. chopped pecans
1 tsp. ground cinnamon

Mix and spread the topping over the potatoes. Bake at 350 degrees for 45-50 minutes. Makes 10-12 servings.
