BROILED BEEF
1 lb. (450 grs) beef, not too lean (fat and lean streaked is best)
2 tbsp. soy sauce
1 tbsp. sugar
1 tbsp. sesame oil
1 tbsp. sesame salt
1/8 tsp. black pepper
4 med. green onions, coarsely chopped
3 cloves garlic, finely chopped
1 tsp. fresh ginger, finely chopped
2 tbsp. water, rice wine or white wine
2 tsp. sesame seeds
Accent

Cut the beef into thin slices about 3 inches square by 1/8 inch thick. This can be done at the butcher's shop. Marinate the beef in the remaining ingredients for up to 1 1/2 hours. Traditionally, this meat is broiled at the table on a Korean pulgogi grill over charcoal, gas ring or hotplate. Otherwise, use a frying pan or oven-broiler.

Pork is also cooked in this way, or a combination of meats can be used.
