NAIN'S PINEAPPLE COOKIES | |
2/3 c. butter, softened 1 1/2 c. brown sugar 2 eggs 1 c. crushed pineapple 2 1/2 c. flour 1/2 tsp. salt 1 tsp. baking soda 1 tsp. baking powder 1 c. chopped nuts 1 tsp. vanilla PINEAPPLE GLAZE: 6 tbsp. butter 6 tbsp. pineapple juice Confectioners' sugar Drain and reserve crushed pineapple juice. Combine ingredients in the order given. Add a bit more flour if cookie spreads too much while baking. Bake at 375 degrees for 12-14 minutes until lightly golden. Cool slightly then frost with Pineapple Glaze. Pineapple Glaze: Brown 6 tablespoons butter and add juice. Then add 10X sugar until mixture spreads easily. Frost cookies while warm. |
