GO-LIGHTLY BANANA BRAN MUFFINS 
2 c. ripe bananas, mashed
1 1/2 c. All Bran or Bran Buds cereal
2 c. oat bran flour
1 tsp. baking powder
1/2 tsp. baking soda
1 tsp. vanilla
1/4 c. butter
1/4 c. sugar
1 egg white
1/2 c. egg beater
1/4 c. walnuts (optional)

Can use 1 whole egg and 2 egg whites.

Preheat oven to 350 degrees. Combine mashed bananas and cereal, mixing well. Allow to stand 5 minutes to soften cereal. In a large mixing bowl, combine butter, sugar and vanilla with mixer until smooth. Add eggs and mix thoroughly. Add banana mixture and mix well. Stir in flour, baking powder, baking soda and nuts; stir until just blended. DO NOT OVER MIX. Measure 1/3 cup batter into 12 large muffin cups that have been sprayed with non-stick vegetable coating. Bake 20 minutes.
