TAPIOCA PUDDING 
2 eggs, separated
2 c. milk
3 tbsp. quick tapioca
1/2 tsp. vanilla
1 tsp. artificial liquid sweetener
1/8 tsp. salt (opt.)

1. Mix egg yolk with a small amount of milk in a saucepan.

2. Add remaining milk, tapioca and salt.

3. Cook over medium heat, stirring frequently until tapioca is transparent and mixture thickens slightly.

4. Remove from heat.

5. Add vanilla and artificial liquid sweetener.

6. Beat egg whites until they stand in soft peaks; add to tapioca mixture.

7. Chill. Diabetic - 1 serving = 1/2 milk exchange.
